Kulfi

Kulfi is a popular flavored frozen dessert, made from milk. In taste, texture and preparation, it shares commonalities with ice cream.

INGREDIENTS

  • 1/4 cups evaporated milk
  • 1 1/4 cups sweetened condensed milk
  • 1 (16 ounce) container frozen whipped topping, thawed
  • 4 slices white bread, torn into pieces
  • 1/2 teaspoon ground cardamom
  • coarsely ground pistachios (optional)

PREPARATION

  1. Combine evaporated milk, condensed milk and whipped topping in a blender and blend in pieces of bread until smooth add cardamon at the end and blend.
  2. Pour mixture into a 9x13 inch baking dish or two plastic ice cube trays, freeze for 8 hours or overnight.

 



Almond Milk

INGREDIENTS

  • 1/2 Cup Almonds (soaked overnite)
  • 1/4 cup Pistachios
  • 6 Cardamon Pods
  • 1/4 cup water
  • 3 or 4 glasses of Cold Milk
  • 6 Tsps Sugar (or to taste)
  • 2 or 3 Pitted Dates

PREPARATION

  1. Soak almonds overnight in water. Remove the skin and grind along with pistachios, cardamom, dates and sugar add sum water to make a smooth paste.
  2. Then add milk into the smoothie mixer , and blend along with the other ingredients.
  3. Garnish with ground nuts.
  4. You can seive the drink in case u don't like too many almonds in the mouth.
  5. Serve chilled.

 



Rasmalai

INGREDIENTS

  • 2 lbs Cows Milk or Ricotta cheese
  • 1/2 cup sugar
  • 32 oz half & half milk
  • A pinch of saffron
  • 1/4 tsp crushed cardamom seeds
  • 1/2 cup blanched almonds
  • 2 tbsp crushed green pistachios

METHOD

  1. Mix the cheese with sugar and little cardamom powder and spread out on a baking tray.
  2. Bake at 350 degrees for 35 minutes or wait till it sets. It should not get brown.
  3. Remove from oven, cool at room temperature and cut into2" squares. Place them in a dessert bowl.
  4. Mix the other ingredients, except the pistachios well in a separate dish and pour over the squares.
  5. Decorate with pistachios, chill for 2-3 hours and then serve.
